Chicken Skillet Burritos

Introduction

Im my recipe, i used frozen chicken tenders. Add more rice for a main entree or add lettuce, cheese, sour cream, and wheat tortillas for a twist on burritos and melts. You could even slice or dice the chicken if you plan to serve it in tortilla wraps Im my recipe, i used frozen chicken tenders. Number of Servings: 5

Ingredients

    1 lb. Boneless Chicken
    3/4 c. Brown Rice, uncooked
    1 can Black Beans, with juices
    1c. Salsa
    3/4c. frozen corn
    tt(to taste) Ground Cumin
    tt Rubbed Sage
    2T chopped onion, or 1T dry minced onion
    1.5T garlic powder

Directions

Cook chicken half way in skillet.
Add beans, salsa, spices, corn, rice, onion. Bring to bowl.
Simmer on low heat, covered, until rice is cooked to liking.
Serve alone or top wheat tortilla shells with mixture and add cheese, lettuce, sour cream or other toppings.
