Introductionyummy, thick and hearty~ low fat high fiber and GREAT for chilly nights or lunches yummy, thick and hearty~ low fat high fiber and GREAT for chilly nights or lunches
1 tbsp olive oil
1 medium chopped yellow onion
1.5 tspn minced garlic
8 baby carrots chopped
1 1/3 c lentils
4c vegetable broth
1/2 c beef broth
1 cup cubed boiled potato with skin
6oz. cubed 95% fat free ham (3/4 c)
let simmer for as long as you can - probably about an hour if you like the lentils to be nice and soft and tender
add in the ham and the potatoes whenever you feel like it after the soup begins to look like soup
after it has simmered a while, salt and pepper to taste!
serve with warm bread, or pita or crackers... over rice, cous cous, etc.
makes 4 1/2 1 cup servings once it has simmered and cooked down a bit.
