Cajun Turkey Skillet



Introduction

Last minute dinner, thrown together but came out great. Last minute dinner, thrown together but came out great.
Number of Servings: 5

Ingredients

    1 lb 93% lean ground turkey
    1 pack of instant red beans & rice mix (makes 2 cups)
    chopped onion
    garlic clove
    yellow bell pepper (any color can be used)
    1 can diced or sliced tomatoes with juice
    red pepper

Directions

In skillet, brown ground turkey. Add chopped onion & pepper and minced garlic clove. In a separate pan prepare red beans & rice mix. After onions & peppers are cooked, and rice & beans are done, mix together in skillet. Add can of tomatoes & juice. (May need to add a little water if it gets too thick.) Add red pepper & black pepper to taste.
Serving size = 1 cup, makes approx 5 cups
