veggie quesadillas

Ingredients

    1/2 red onion, chopped
    1 small zucchini squashed , sliced in 1/4" slices
    1 large tomato, chopped
    1 red pepper, chopped
    2 whole wheat tortillas
    1/2 c 2% mozzarella cheese grated

Directions

spray pan with cooking spray or olive oil, "stir fry" the vegetables until tender. in a separate pan, heat a tortilla and sprinkle 1/4 c mozzarella cheese on it, heat until cheese melted. Place tortilla on plate and place half (about 1 cup) of the vegetables on it and fold it in half. Repeat with second serving. I add Mrs Dash or Spike seasoning to the veggies as I cook them. Season to your taste.. Makes 2 servings.
