3-4 green onions, finely sliced
1/2 cup diced smoked gouda
2 ribs of diced celery
Apple cider vinegar
2 cans black beans
1 can chick peas
Yellow, green & red bell pepper, diced, about 1/4 cup each
1 can sliced hearts of palm â€“ can be omitted
2 tbsp. olive oil
Juice of one half of a lime
Cilantro to taste
1 can niblet Mexican style corn
1/2 can drained sliced black olives
3/4 cup diced hard salami
1 can chilies
After a friend had surgery and had a hard time eating protein, she needed a recipe that was versatile that she could use for breakfast, lunch or dinner.She made this black bean salad all the time and it truly sustained her through some tough days.
Mix all ingredients. Let marinate 3 to 4 hours at least. Adjust seasonings to taste. More vinegar may be necessary as beans absorb vinegar during marinate process. Garnish with lime wedge and extra cilantro.
