1/2 cup all purpose flour
1/4 tsp baking powder
1/4 tsp salt
1/4 cup light stick butter at room temperature
4 oz. light cream cheese, softened
3 apples, thinly sliced
1/4 cup sugar
2 tbsp flour
1 tsp. ground cinnamon
For the crust:
Stir together dry ingredients. Cut in butter. Continue mixing until no pastry sticks to the sides of the bowl. Shape into a ball and chill for one hour. Roll dough to fit in an 8 inch pie plate.
For the filling:
Carefully spread the cream cheese in a 6 inch circle in the center of crust. In a bowl, combine apples, flour, sugar, and cinnamon and mix. Spoon over the cream cheese.
Fold the crust partially over apples.
Bake at 450 degrees for 25 minutes; covering loosely with foil the last 5 minutes. Cool. Refrigerate any leftovers.
