Introduction

Number of Servings: 4

Ingredients

    18 oz skinless, boneless chicken breasts
    1 small apple
    1 cup chopped celery
    2 TBS chopped onions
    1 cup quarted seedless red grapes
    1 cup fat free cottage cheese
    2 tsp skim milk

Directions

First chop the chicken (I chopped it in a food processor). Then cook the chicken. While the chicken is cooking chop the small apple, 1 cup of celery, 2 TBS of onions, and quarter the grapes. In a blender whip the cup of cottage cheese and 2 tsp of skim milk for 2-3 minutes, until smooth and creamy. In a large bowl combine the cooked chicken, apples, celery, onions, and grapes. Add the cottage cheese mixture from the blender to the large bowl and mix. Then enjoy your chicken salad by itself, on lettuce, or a wheat bun. It's so good you will be making it again soon!
