Cranberry Raisin Walnut Granola Bars

Introduction

this is great for those days when you need a quick breakfast or snack. this is great for those days when you need a quick breakfast or snack.
Number of Servings: 7

Ingredients

    1/2 Cup Oatmeal (uncooked)
    1/8 Cup Craisins dried cranberries
    1/8 Cup Raisins
    1/4 Cup Bran or Multigrain Flakes ( I used Nature's Path Organic Flax Plus cereal)
    1/8 Cup Coconut
    1 1/2 T Chocolate Chips
    1T Diced walnuts
    1/2 t baking soda
    3 T Soy Protein Powder (I used Genisoy)
    1/8C creamy Peanut Butter ( I used Smucker's Natural)
    1/8C Brown Sugar
    1 1/2T Margarine (I used Blue Bonnet Light)
    1 1/2 T Honey
    1/2 tsp Vanilla

Directions

1. Preheat Oven to 350 degrees.
2. Spray a pan with cooking spray.
3. Mix first 8 items together in a bowl (dry ingredients)
4. Whisk together in a small saucepan, Peanut butter, Brown sugar, margarine, honey, and vanilla
5. Cook over low heat until brown sugar is melted, (do not overcook)
6. Pour wet mixture over dry ingredients in bowl and mix well.
7. Press into Pan sprayed with cooking spray (make sure to press down good to hold it together)
8. Bake in oven until brown about 15-20 minutes
9. Cool before cutting

Recipe Makes Approx 7 Bars (4 inches Long X 2 inches Wide)
