New Year's Fajitas (1 serving = 1 fajita)

Number of Servings: 6


    4 boneless skinless chicken breasts
    1 shot (2 tbsp) tequila
    2 tbsp lime juice
    ½ tsp oregano
    1 tsp ground cumin
    1 tsp chili powder
    1 tsp minced garlic
    1 onion
    1 bell pepper
    2 cups salsa
    6 tortillas (I used Low Carb Mission 6" tortillas for the nutrition info)
    1 lime


1) Combine tequila, lime juice, oregano, cumin, chili powder and garlic in a plastic bag.

2) Place chicken in bag and marinate at least 2 hours or overnight.

3) Steam – layer chicken, cover with onion and bell pepper. (I also tried this cooking the chicken on the George Foreman grill and I sauteed the pepper and onion in a skillet with pam cooking spary and it came out great)

4) Squeeze lime juice all over.

5) Steam 15 minutes.

6) Pierce with fork at thickest part – clear juice if it is done. If not, steam 2-5 minutes more.

7) Cut into strips. Heat salsa. Roll into tortillas.
