Blender Whole Grain Waffles

Ingredients

    3/4 cup buttermilk
    1-1/2 tsp olive oil
    1/2 tsp vanilla
    1/4 cup uncooked rolled oats
    1/4 cup uncooked whole grain (wheat, spelt, Kamut)
    1 egg
    1 tsp honey
    1/8 tsp baking soda
    1/4 tsp salt
    1/2 tsp baking powder
    1 tsp cinnamon

Directions

Taken from the Sue Gregg whole foods cooking website - I modified this recipe for 2 servings.


1. Place in blender & blend at highest speed for about 5 minutes:

buttermilk (or water & buttermilk powder)
olive oil
vanilla
oats
Kamut or other whole grain (Kamut is really high in protein)


2. Add in egg, baking soda, baking powder, cinnamon, honey & salt. Blend 1-2 more minutes until smooth.


3. Spray & preheat waffle iron or griddle. Bake 3-5 minutes or until desired crispness.
