Poached Garlic Chicken with Whole Grain Pilaf & Mushrooms

Number of Servings: 2

Ingredients

    1 c. water
    1 c. reduced sodium, 99% fat free chicken broth
    2-3 sprigs fresh thyme
    2 cloves garlic, minced
    2 (4 oz) boneless, skinless chicken breasts
    2 c. fresh mushrooms, sliced
    1 (8.5 oz) pouch Kashi Our Original 7 Whole Grain Pilaf, warmed according to the "microwave in pouch" instructions
    Salt, to taste (adjust accordingly)

Directions

1. Bring the water, broth, thyme, and garlic to a boil in a skillet. Add chicken and mushrooms to broth and cook on medium-high heat, covered, for 10-12 minutes, or until cooked through. Remove chicken breasts to plate and cover with tinfoil. Let rest while finishing the dish. Also, discard thyme stems.

2. Turn heat up to high and boil the cooking liquid with mushrooms until all but 2 Tbsp liquid remains. Turn heat off, add warmed pilaf to skillet and mix. Top pilaf with chicken breasts and allow to warm through. Season with salt, if desired. Serve.
