No Sauce, No Boil, Veg-Tastic Lasagna

Introduction

Hungry for a warm and veggie-heavy dish, we came up with this unique lasagna using no-cook noodles, acorn squash, other veggies, and no sauce at all - you won't miss it though! We had it as a side, but it's good enough for the main course! Ingredients

    6 Barilla no-cook lasagna noodles
    1 acorn squash
    1 zucchini, sliced thinly
    2 roma tomatoes, sliced thinly
    1/2 c. chopped onion
    1/2 c. shredded pizza cheese or mozzarella cheese
    1/4 c. fresh grated parmesan
    fresh thyme
    salt
    pepper

Directions

Cut acorn squash in half, scoop out seeds, and place skin-side up in microwaveable dish with 1 inch of water. Microwave for 6-8 minutes or until soft. Scrape out squash and mix with fresh thyme, salt and pepper to taste.


Heat oven to 400. Spray 9x9 glass baking dish with cooking spray. Layer two noodles on bottom, then spread half of squash mixture. Top with half the onion. Layer two more noodles, then the shredded cheese, tomatoes, zucchini, and remaining onion. Top with last two noodles, spread remainder of squash mixture, and top with remaining cheese. Grate fresh parmesan on top of that.


Cover with foil and bake for 40 minutes. Remove foil, and bake an additional 20 minutes or until nice and golden on top.


Makes 4 servings, about 1 cup each.
