Jenny's Habanero Salsa

This is a HOT and fresh salsa option with a lot less sodium than jarred salsa! This is a HOT and fresh salsa option with a lot less sodium than jarred salsa!Number of Servings: 32
Ingredients

6 habanero peppers (more if you like it super hot!)
1 tsp garlic, minced
1/2 tsp salt
1 tsp white vinegar
1/2 C onion, chopped fine
1 can of diced tomatoes
1 fresh tomato, chopped
Directions
Place habanero peppers on foil covered sheet in oven. Turn on broiler around 400 degrees. Cook chilies until they start to wilt or char. Turn chilies with tongs as necessary. (Do NOT handle chilies with bare hands if possible and beware of fumes or touching your eyes.)
When chilies are done, let cool and remove stems and most of the seeds. Seeds=Spice. Place chili pieces in a blender with 1/2 the can of tomatoes (juice included), garlic, salt and vinegar. Blend until a smooth paste is formed. (I use a Magic Bullet.) Combine remaining ingredients in a bowl, add chili/tomato paste and stir. Season to taste.
Options: garlic salt, cilantro, canned green chilies.
