IntroductionThis seafood dish is easy to make and delicious to eat! This seafood dish is easy to make and delicious to eat!
1 1/3 cups Trader Joe's Seafood Blend (shrimp, bay scallops and calamari rings) (still frozen is fine)
1 clove garlic, minced
1/8 c sundried tomatoes, chopped (not in oil if possible)
2 T lemon juice
3 c fresh or 1 c frozen spinach
1 T olive oil
Place seafood in a shallow baking dish (I use a metal pie pan). Add lemon juice, garlic, sundried tomatoes and olive oil. Stir well to coat.
Broil about 6 minutes, remove from oven and add spinach. Stir well, then return to oven until spinach is heated through.
