Chicken & Broccoli Fettucini Alfredo

Introduction

Serve this yummy dish with a side salad topped with low cal dresssing and add a side of natural sugar free applesauce for dessert. You'll have a fantastic supper under 600 calories. Ingredients

    2 cans fat free evaporated milk
    1/2 cup shredded FF mozzarella
    1/2 cup italian blend cheese romano & parmesan
    1 1/2 cup shredded parmesan
    3 1/2cup broccoli
    16 oz package fettucini noodles
    6 chicken breasts
    1 cup water
    2 tbsp corn starch
    1/4 - 1/2 cup onion
    2 -4 cloves garlic
    1tbsp olive oil

    I like to have my chicken and broccoli thawed before hand easier to use or you can use fresh.

    Salt & pepper to taste if desired, also you could use more or less of onion and garlic or even different spices depending on tastes!

Directions

Put pot of water on to boil for noodles. In seperate skillet add water, oil, onion, and chicken. Cook chicken until close to being done add in garlic and finish cooking chicken. Add noodles to boiling water, cook until almost soft, remove from heat and drain. Remove chicken from skillet and chop finely. Add chicken, broccoli, and noodles in a casserole dish in a layered fashion. Take the stock from skillet and put it in a pot, add a little water if it seems to have evaporated to much. In that pot also add in cheeses and evaporated milk. Bring this to a nice warm heat until most of cheese has melted. Stir in corn starch to help thicken. Add sauce on top of stuff in casserole dish. Place lid on dish and put in oven at 350 for 20-40 minutes depends on broccoli's doneness. Remove lid, stir, serve, and enjoy!

You can also add a 1 cup mix of mozzarella & parmesan mix to melt on top of casserole or just straight FF mozzarella for an additional few calories.
