Rice 'N Oats Cakes

Introduction

Yummy & healthy...what more can you want? These can be made into cookies or muffins. Yummy & healthy...what more can you want? These can be made into cookies or muffins.
Number of Servings: 18

Ingredients

    1 cup cooked brown rice
    1 egg
    2 Tbl vegetable oil
    3/4 cup milk

    2 cups oats, uncooked
    1/2 cup brown sugar
    1/2 tsp salt
    2 tsp baking powder
    1 tsp cinnamon
    1/2 cup raisins
    1 tsp vanilla

Directions

Put first 4 ingredients in blender, mix for 1 min or until well-mixed. Pour into bowl.
Add remaining ingredients & mix. Spoon into greased muffin tin or cookie sheet. Bake at 350 for 20 min.
Makes 18 2-oz muffins or cookies.
