Pumpkin Minis

Number of Servings: 50

Ingredients

    2 eggs, beaten

    1 cup sugar

    1 cup canned pumpkin

    3/4 cup olive oil

    1/4 cup water

    1 2/3 cup flour

    1 teaspoon baking soda

    3/4 teaspoon salt

    1/2 teaspoon baking powder

    1/2 teaspoon ground cloves

    1/2 teaspoon nutmeg

    1/2 teaspoon cinnamon

    1/2 cup nuts, chopped (optional)


Directions

Place all moist ingredients in pan. Mix all dry ingredients in a separate pan, and, after mixing, add to moist ingredients. Mix the two together.

Will make approximately 50 mini muffins.
