Caramelized French Onion & Portabella Risotto

Submitted by: MRSDUDLEY

Introduction

The extra time put into making classic risotto is worth the wait. This version uses quick ingredients and pairs nicely with any meat. It is also hearty enough to be served as a meal on it's own. Could easily be converted to a vegetarian recipe. The extra time put into making classic risotto is worth the wait. This version uses quick ingredients and pairs nicely with any meat.
