The extra time put into making classic risotto is worth the wait. This version uses quick ingredients and pairs nicely with any meat. It is also hearty enough to be served as a meal on it's own. Ingredients

1C - Gourmet House Italian Arborio Rice
1T - Land O Lakes light butter w/ canola oil
1 tsp - Olive Oil
8oz - fresh sliced baby portabella mushrooms
2C - Great Value Beef Broth
1 18.8 oz. can - Campbell's Select Harvest Caramelized French Onion Soup
Directions
Makes 10 - 1/2 Cup Servings
Heat a large skillet on med-high heat over stovetop. Saute' rice in butter and olive oil for 1-2 minutes. Add the mushrooms and saute' until the mushrooms begin to release their moisture.
Slowly begin to add the beef broth and onion soup 1 cup at a time.
After each cup is added continuely stir the rice until the liquid has been absorbed. Then add another cup and stir until liquid is absorbed. Repeat until all the broth and soup have been added.
This process is a bit time consuming. However, the result is delicious. Enjoy!
