Faux Baked Parmesan Chicken

Ingredients

    6 boneless skinless chicken breasts
    3/4 cup Triscuits -- crushed ( I like to experiment with different flavors of Triscuits)
    2 tablespoons parsley -- chopped
    3/4 cup Italian Dressing
    3/4 cup Parmesan Cheese -- grated
    1/2 teaspoon garlic powder
    1/2 teaspoon salt

Directions

Marinate Chicken breasts in Italian Dressing for 30-40 minutes.

Mix together Triscuits, parsley, cheese and seasonings.

Drain chicken breasts and dredge in Triscuit mixture.

Place in a greased casserole and bake at 350 degrees for 45 minutes.

  • This was very good. I didnt have Italian dressing so I experimented with a "made up" marinade. But I know it would have been better with the dressing. I will definitely make this again! - 10/5/08

  • LiterB93--This chicken sounds marvelous! I can't wait to try it. I think I will switch to reduced fat parmesan cheese and fat free Italian dressing though--since I'm watching calories. - 9/29/08
