Almond Oat Protein Bars

Introduction

Number of Servings: 12

Ingredients

    ¼ cup applesauce or crushed pineapple
    ¼ cup nut butter (almond butter good choice)
    ½ cup natural honey, agave, pure maple syrup, splenda or brown sugar twin
    ¼ cup plain yoghurt
    2 tablespoons molasses
    2 teaspoons vanilla or almond extract
    ½ teaspoon salt
    1 cup of chopped nuts – almonds, walnuts are good choice
    3/4 cup of oatmeal
    ¾ cup of whole wheat flour
    1/2 cup of protein powder
    ¼ cup ground flax
    1 teaspoon baking powder
    ½ cup dried fruit (dates are delicious, raisins, cranberries and Turkish apricots are great too)


Directions

Preheat oven to 350 and spray a 9 by 9 inch backing pan with PAM.
Cream applesauce and nut butter in food processor. Add agave (or sweetener of choice), yogurt, molasses, vanilla.
In bowl, combine dried ingredients. Add the butter mixture and stir together until moistened.
With moistened hands, press the dough into baking pan. You can score the bars if you like.
Bake 15-20 minutes until golden.
Remove from oven and cool for 10-15 minutes.
Score bars into 12 squares with paring knife.
Once cool cut bars and store in Tupperware or glass jar.
