Ingredients

1/2 -pkg whole wheat lasagna noodles aprox
12 noodles needed.
1 -1kg bag of baby Spinach
1 -500ml 1% skim cottage cheese drained
4 -TBS dried/shredded parmesan cheese
1/4 -tsp ground nutmeg
3/4 -cup low fat mozzarella cheese
Salt and Pepper to taste
Low sodium herb Spaghetti Sauce
Directions
Preheat oven to 350 degrees farenheit
Cook noodles according to instructions on package. Steam spinach until tender; cool and drain VERY WELL and chop. (squeezing it through cheese cloth works well). Add cottage cheese, parmesan, nutmeg, 1/2 the mozzarella cheese and the salt and pepper. Spoon a couple of tablespoons onto a cooked lasagna noodle, spread spinach mixture evenly and roll up. Place each roll, seam down, into a baking dish. Pour Spaghetti sauce over the spinach rolls and top with remaining mozzarella cheese. Bake until heated through and cheese is melted and bubbling.
