16 bean tomato soup

Introduction

Whipped up from stuff in fridge, to use up ham bone and leftover chicken broth. Whipped up from stuff in fridge, to use up ham bone and leftover chicken broth.
Number of Servings: 19

Ingredients

    1 lb. bag 16 beans soup mix (beans only)
    8 cups water
    3 cups condensed no salt, chicken broth (homemade best)
    1 28 oz can crushed tomatoes
    1 large ham bone, with a little meat still on it.
    10 oz. ham, diced (from the ham bone)
    3 cups onion, chopped
    9 oz. baby carrots, cut in halves
    5 cups chopped napa or savoy cabbage
    2 large yukon gold potatoes (about 2 lbs total)
    cut in small cubes
    1 1/2 cup mushrooms, chopped
    1 cup red bell pepper, diced
    4 Tbs ginger-garlic paste**
    **or 5 large cloves garlic, 3 tsp grated fresh ginger root
    2 Tbs turmeric
    2 Tbs Italian seasoning blend
    5 small bay leaves (or 2 large)
    1 tsp paprika
    1 tsp cumin
    1-2 tsp red pepper flakes

Made about 19 cups in total of very rich, thick stew-like soup.
