Homemade Chicken Noodle Soup

Nothing better than homemade chicken noodle soup. Feel free to make a smaller batch by either using a smaller chicken or only using half the meat and then half the rest of the recipe. Number of Servings: 20

Ingredients

    1 Whole Chicken (about 4 pounds)
    4 Chicken Bouillon Cubes
    Enough Water to Cover Chicken
    1 Medium Onion
    1 Cup Chopped Celery
    1 Cup Chopped Carrots
    1 Cup Corn (I Use Frozen)
    1 Cup Peas (Also Use Frozen)
    1 Tablespoon Dried Parsley
    1 Teaspoon Dried Basil

    Noodles:
    4 Eggs
    .5 Cup Milk
    2 Teaspoons Salt
    About 3.5 Cups Flour

Directions

Noodles:
Combine beaten eggs, milk, and salt. Add enough sifted flour to make stiff dough. Roll out very thin on floured surface. Let stand 20 minutes. Using a pizza cutter cut into strips about 2 inches long by about 1/4 inch wide. Spread out and let dry 2 hours. Drop into boiling soup and cook, uncovered, about 10 minutes.

Soup:
In a large pot cover chicken with water, add chicken bouillon. Cook until chicken comes off bones easily. Save broth. Debone chicken and put meat in broth. Add remaining ingredients except noodles and let simmer on low heat for several hours, stirring occasionally. Ad noodles about 10 minutes before serving cook until noodles are tender. Makes about 15-20 1 cup servings.
