Southwestern Steak Fajitas

Introduction

The most wonderful way to still have steak for lunch and dinner! Couple it with a nice salad and some sliced avocado and fresh sliced tomatoes! The most wonderful way to still have steak for lunch and dinner! Couple it with a nice salad and some sliced avocado and fresh sliced tomatoes!
Number of Servings: 2

Ingredients

    8 ounces well-trimmed beef sirloin, cut into thin strips
    1 small onion, thinly sliced
    1 small green bell pepper, seeded and cut into thin strips (I use 1/2 green, 1/2 red or yellow)
    1 teaspoon ground cumin
    4 small flour tortillas (I use low-fat ones)

Directions

This was a hand-out card at my Weight Watchers meeting, so credit goes to them!

1. Spray large nonstick skillet with nonstick spray; heat. Add beef; cook, stirring, until browned. Transfer to plate; set aside.
2. Add onion and pepper strips to same skillet; cook, stirring, until softened, 2-3 minutes. Add beef and cumin; cook, stirring, until beef is cooked through, 1-2 minutes.
3. Microwave tortillas just until warmed, 15-20 seconds; set on plate and top with beef mixture.

Makes 2 servings.

Top with shredded lettuce, chopped tomato, and light sour cream.
