Danielle's Southwest Breakfast Sandwich

Introduction

This is easy and filling. You can make several and wrap in aluminum foil and reheat in the oven. The calorie count is only for one part of the muffin, so if you want a top and bottom, increase your counts. This is easy and filling. Ingredients

    1 part of whole grain English Muffin
    1 large egg
    1 slice reduced fat Cheddar or Swiss Cheese
    1 slice turkey bacon, cut in two
    1 green chile, diced

Directions

I cook the bacon, chile and egg at the same time in a large skillet and also place the muffin in the same pan to heat up. Once the egg and bacon is done, place the chile on the muffin, then the cheese, bacon and the egg on top. I then put the cover on the skillet, with the burner off and heat up the whole thing for about 2 minutes, just so the cheese melts.

If you can't get green chile, you can use bell peppers or tomatoes.
