Macaroon Energy Balls

Introduction

Easy to make and great for on the run snack. Easy to make and great for on the run snack.
Number of Servings: 60

Ingredients

    7 medium sized eggs
    1 cup Brown sugar
    1 cup white sugar
    1 tsp vanilla extract
    7.5 cups coconut, half shredded and half
    desiccated.
    1 cup Raisins
    1 cup chopped dried cranberries
    1 cup slivered Almonds
    0.5 cup sunflower seeds
    0.5 cup Pumpkin seeds

Directions

Makes 60 balls.
Pre-heat oven 150'C. Line or grease cookie trays.
Combine eggs and sugars, beat with mixer until thick and pale.
Add rest of the ingredients to egg mixture and combine well.
Roll into one inch size balls, place on cookie trays.Bake 35 - 45 minutes until slightiy golden brown or firm'ish to the touch.
Remove from the oven cool on racks. store in air tight container/s.
