In a large saucepan bring carrots, onion, celery and broth to a boil; reduce heat and simmer 15 minutes or until veggies are tender. Add browned beef, cooked rice, cubed cheese and milk; simmer until cheese is melted(do not boil). Just before serving whisk in sour cream. 10 servings
This was GREAT!! Tweeked the recipie. didnt use carrots or celery, instead 1/2 bag spinach. used lean hamburger meat and added jalapeno. didnt add the milk - its expensive and it turned out just fine w/o it; i feel it would have been too liquidy with the milk. i see this as being a thicker soup?
It would have been so much better with potatoes instead of brown rice, but I know that would have defeated trying to make a healthy soup. I like it but it makes a ton and I'm the only one that will eat it.
I made this soup tonight to take to work a few days next week. It is fabulous!!! I love cream style soups but usually have to avoid. This tastes like it's much more fattening than it is! Delicious!!!! Thanks so much for posting this recipe!
