Ingredients

    4 MEDIUM BELL PEPPERS
    1 LB GROUND BEEF, SAUSAGE, TURKEY OR WHATEVER MEAT YOU LIKE THE BEST (EVEN RED BEANS TASTE GOOD)
    2 CUPS MINUTE RICE (PREPARED)
    1 CUP CAMPBELLS LOW FAT MUSHROOM SOUP
    1 CUP SALSA
    1/2 CUP SOUR CREAM
    1/2 CUP TOMATO PASTE

Directions

FRY MEAT WITH A TOUCH OF PEPER AND SALT.
DRAIN AND RINSE.

STEAM OR BOIL RICE AS ACCORDING TO PACKAGE INSTRUCTIONS.

MIX MEAT, RICE, MUSHROOM SOUP AND SALSA (I USE HOMEMADE, BUT STORE BOUGHT IS FINE) IN A LARGE BOWL.

CLEAN AND CUT TOPS OFF OF PEPPERS, REMOVE SEEDS FROM PEPPER.

PLACE STUFFING MIX INTO THE PEPPERS, AND STAND THEM UP IN A CASSEROLE DISH TO BAKE.

BAKE PEPPERS UNTIL DESIRED FIRMNESS IS ATTAINED.

MIX SOUR CREAM AND TOMATO PASTE TOGETHER IN A BOWL.

PLACE ON TOP OF PEPPERS IMMEDIATELY BEFORE SERVING
