6 Tbsp Orange marmalade, sugar free
3 scallions, chopped
1 1/2 tsp lemon juice
1/4 tsp crushed red pepper flakes
3 tilapia fillets (4 oz each)
15 oz canned mandarin oranges, drained (optional-not added into calorie count)
In a saucepan over medium heat, warm up the marmalade, chopped green onion, lemon juice, and crushed red pepper flakes; spread mixture on one side of each fish fillet. Place fish on grill or a metal baking pan. Grill/broil for 3 to 4 minutes per side, brushing with marmalade glaze as needed while fish is cooking. Serve fish with orange sections. Mandarin oranges not included in calorie count. Makes 3 (4-oz) servings.
