Gold Medal Better for Bread flour, 1 1/2 c.
Pillsbury Whole Wheat Flour, 1 1/2 c.
Flaxseed, 2 tbsp
Cinnamon, ground, 1 tbsp
Nutmeg, ground, 1 tsp
Baking Soda, 1 tsp
Salt, 1/2 tsp
Musselmans Unsweetened Applesauce 1 c.
Del Monte Pineapple, crushed w. juice, 1 cup
Bananas, overly ripe 3 medium mashed
Splenda Brown Sugar 1/4 c.
Splenda No Calorie Sweetener, 1/2 c.
Egg Whites, 2
Vanilla Extract, 1 tsp
Directions
Mix all dry ingredients: flours, flaxseed, cinnamon, nutmeg, baking soda, salt.
Mix wet ingredients: Applesauce, Pineapple, Mashed bananas, egg whites, vanilla extract, and mix in Splenda White and Brown Sugars.
If need be cut slices of banana into food processor and chop to finer consistency. Also, you can get your cubed pineapple to crushed using the food processor.
Combine wet into dry ingredients. Muffin pan should be sprayed with oil before ingredients are placed. Bake at 350 for approximately 30 minutes.
