Danielle's Salmon Breakfast Sandwich

Introduction

Number of Servings: 4

Ingredients

    4 large eggs
    2 tablespoons scallions, minced
    1 tsp canola oil
    2 oz smoked salmon, chopped
    4 tablespoons light whipped cream cheese
    2 whole grain English muffins
    ground pepper


Directions

Heat up canola oil in skillet. Add minced scallions. Whisk eggs with ground pepper. Add eggs to skillet and stir until it starts to firm up then add chopped smoked salmon.
Toast in skillet the muffins then spread cream cheese on muffins. Place the egg/salmon on cream cheese. Enjoy!

I only use half the muffin per serving, if you use the full muffin, adjust your nutrient info. I make this up in a snap on Monday mornings and have several days worth of breakfast.
