1 cup sifted cake flour
3 tbsp unsweetened cocoa powder
1 1/2 tsp cream of tartar
1/4 tsp salt
3/4 cup sifted powdered sugar
10 egg whites
1 1/2 tsp vanilla extract
1 cup sifted powdered sugar
Sift together flour, 3/4 cup powdered sugar and cocoa powder into large bowl; repeat; set aside.
In a large mixer bowl beat egg whites with cream of tartar, vanilla, and salt at medium speed with electric mixer until soft peaks form.
Gradually add the 1 cup powdered sugar, 2 Tbsp at a time, beating at high speed until stiff peaks form.
Sift about 1/4 cup of flour mixture into the whites; folding in. Repeat, folding in remaining flour by fourths.
turn the batter into an ungreased 9-inch tube pan.
Bake on lower oven rack in at 375F for 30-35 minutes or until done.
Invert cake in pan; cool. using spatula, loosen cake from pan; remove.
