Not the Same Old Pumpkin Bread

Ingredients

    3 1/4 Cups Flour
    2 tsp ground cinnamon
    2 tsp ground nutmeg
    1 tsp cloves
    1 3/4 tsp baking powder
    1 tsp salt
    1/2 tsp baking soda
    1 3/4 cups cooked pumpkin or 1 15 oz can unsweetened pumpkin
    1 1/3 cups firmly packed brown sugar
    2/3 cup fat-free milk
    1/2 cup vegetable oil
    2 tsp vanilla extract
    2 large eggs, lightly beaten
    Cooking Spray

Directions

1. Preheat oven to 350 degrees

2. Combine first 7 ingredients in a large bowl; make a well in center of mixture. Combine pumpkin and next 5 ingredients; stir with a whisk until well blended. Add to flour mixture, stirring just until moist.

3. Spoon batter into 2 ( 8 1/2 x 4 inch) loaf pans coated with cooking spray. Bake at 350 degrees for 1 hour or until a wooden pick inserted near center comes out clean. Let cool in pan on a wire rack 10-minutes; remove from pan. Let cool completely. Yields 2 loaves, 12 slices per loaf. (serving size: 1 slice).
