Introduction

These moist pancakes are lightly spiced for the palate of my young child. If you like a bit more pizzazz, you can increase the spices or add others. Cinnamon and pumpkin pie spice both work nicely here. These moist pancakes are lightly spiced for the palate of my young child. Ingredients

    2 cups whole wheat pastry flour
    4 tsp baking pwder
    1 tsp baking soda
    .5 tsp ground nutmeg
    .5 tsp ground ginger
    .25 cup brown sugar
    1 egg yolk
    2 cups skim milk
    1 cup canned pumpkin
    3 Tbsp apple butter
    3 egg whites


Directions

1. In a large bowl, whisk together the flour, baking powder, baking soda, and spices.

2. In a separate bowl, mix together the egg yolk, pumpkin, brown sugar, and apple butter. Stir in milk until well-blended.

3. All at once, add milk mixture to dry ingredients and stir just until combined.

4. In a medium bowl, beat egg whites until light and fluffy (you can use a fork, whisk, or electric beater for this). Fold egg whites into batter.

5. Ladle batter by 1/4 cup amounts onto a preheated nonstick griddle lightly sprayed with cooking spray, Cook until evenly browned on both sides.

Recipe makes 20 pancakes (when the 1/4 cup measure is used).

    I just made these this morning and did use apple sauce instead of apple butter. Not sure the nutrition change yet, but it was tasty. My 3 1/2 year old son ate 2.5 of them with a little light whipped cream, cinnamon and walnuts! Thanks for this recipe. - 11/11/08

    I made these pancakes with canned sweet potato instead. I made 10 large ones, froze them in a tupperware with small sheets of wax paper between them for easy separation, and ate one this a.m., microwaved with apple butter and a sliced banana. That's about 340 calories. My husband loved them too! - 7/21/10

    Wow! I made this for my family for Saturday morning breakfast and the yummy smells woke them up and they stumbled down the stairs to see what i was making. even my hubby liked it, and he's super picky! i would definately make this again. - 11/14/08

    I made them per instruction the first time but the flavor needed to be amped up a bit. So I added 1 tsp of cinnamon, another 1/2 tsp of nutmeg, and a 1/4 cup more pumpkin. I didn't have apple butter but had sweet potato butter. Fantastic! With the added pumpkin, it made 22 pancakes. - 11/17/09

    Yes, you could use applesauce instead of apple butter, but then you would REALLY have to increase the spices because apple butter has lots of spice already in it. Apple jelly is something entirely different -- I would not recommend trying that at all. - 11/10/09

    I just made these and they were great! I added 1t of salt and 1 T of vanilla extract to the batter..I also didn't have apple butter so it was omitted. One word of caution...its better to make them smaller v. bigger, I made a few that weren't cooked in the middle. Great recipe! - 11/27/09

    Loved these, and I do not eat pancakes as a rule. Husband had 3, I had one. I cooled the other 17 on a wire rack and think one of these will be a much better substitution for toast and butter. These I can eat without adding anything. Great recipe....I also added cinnamon. - 10/5/10

    these pancakes are soooo yummy! I substituted organic WW flour for the pastry and used cinnamon instead of ginger, almond milk instead of regular and they were absolutely yummy!!!! So light and fluffy. I also was able to make 30 out of this batch by making them smaller and froze them... - 11/14/09

    A bit of real maple syrup makes the flavor of these come alive! I used roasted pumpkin, not canned, and normal whole wheat flour since I couldn't find it in pastry flour. Nice texture and tasty. I have them in the freezer. - 9/21/10

    I had to omit the apple butter, since I didn't have any on hand, and use soy milk, since that's what I had. I doubled the spices, and added a smidge of cloves and 1/2 tsp of cinnamon, and they turned out really good! Be sure to keep them small, otherwise, the middle can still be uncooked. - 7/17/10

    Loved them... They are a little heavier, but still very filling so you don't eat as much. The Fam even said "Gee you don't need syrup"!!! Next time I'll make all the batter and try freezing them, never frozen pancakes before. - 12/13/09

    Absolutely amazing! Substituted splenda b.sugar, egg beaters, applesauce and doubled the spices! We had 17 kids (no school/home daycare) so I made a triple batch hoping to have some to freeze, but only ended up with about 7 to freeze & had to cut them off! Topped with light whipped cream!     Already a family favorite! Have made this recipe for Sunday breakfast a couple of times. My extremely picky 8 yr old loved these and even requested them for his birthday breakfast. The only changes I made were to use .25 tsp of the spices instead of .50 tsp, also added .25 tsp of cinnamon. - 10/17/10

    My husband really like these pancakes! I added walnuts to part of the batter for me...really liked them. Forgot to buy apple butter, so used regular butter...think it made a difference...will definitely remember apple butter next time. Also added cinnamon per others suggestions. - 10/11/10

    I used regular whole wheat flour because I did not have pastry flour. Also used regular milk (2%) versus skim milk (did not have skim on hand). These were supurb! This recipe makes a large batch of pancakes so I have some freezing for later (which is excellent!). Everyone in my family loved them! - 9/26/10

    WONDERFUL! I really liked this because it doesn't have the "traditional" pumpkin spices of allspice or cloves which I don't like. This is the first pumpkin item I've ever liked! There's a "hint" of the nutmeg and ginger - not overpowering. I loved them! - 2/28/10

    Very nice! Added 1 tsp. of nutmeg and cinnamon. Used Fat Free milk. Used 2 Tbsp Turbinado brown sugar and 2 Tbsp Blue Agave to lower glycemic index. Cook on lower heat then regular pancakes as they will burn. - 1/17/10

    I made only 1/4th of the recipe because it was just for me. I also did not have apple butter but I did not add anything else besides some pumpkin pie spice. I thought this was pretty good. I love pumpkin! Cooks darker but tastes great! - 1/10/10

    These were good pancakes. I wish you'd put down how high to set the stove on to cook, mine burnt. ): I had to use regular all-purpose flour and applesauce. I think it was just a tad bland, but I still have some batter left over that I can add some cinnamon to or I might try a little more ginger. - 1/8/10

    Loved these - and all the comments were helpful. I would increase the spices although maybe my ginger was old. Pumpkin pie spice sounds like a great idea. We ate them with apple butter on top.

    Used whole wheat flour rather than w.w.pastry flour and 1 cup eggbeaters in lieu of 1 yolk + 3 whites. Turned out fabulous! Had maple flavored bacon on the side. Best pancakes my Dad and I have ever had! Thank YOU! - 11/14/09

    YUM! Lite and fluffy. Will increase apple butter and spices a bit next time to increase flavor and may add cinnamon. I always eat my pancakes with yogurt, but took the suggestion of topping with peaches and it was the perfect addition. Wonderful! - 11/14/09

    This sounds great! I've frozen pancakes before, so I don't see any problems freezing any leftovers...IF you have any! To Sarahtyc, apple butter is readily available, look for it by the jams & jellies. I will probably add more spice like cinnamon. Any ideas for leftover egg yolks, hate to waste! - 11/10/09

    I didn't have apple butter so I used apple jelly but I can't imagine it made that big of a difference in taste. My daughter didn't like them at all, and my son and I thought they were just o.k. Not much taste although I put apple jelly on mine and that wasn't bad at all. - 10/30/09

    As the description states, these are lightly spiced. If you like a stronger seasonal flavor, just increase the spices to taste.

  • Yummy! I swapped cinnamon for the nutmeg and used pumpkin butter instead of apple. I made 40 3-inch pancakes from this recipe. I froze them with wax paper between each one, and two make the perfect pre-run snack. Will make these again (once they are gone)! - 11/15/13

  • These were good, especially reheated, but my husband and I thought they needed more flavor. I added some extra cinnamon and cloves to begin with but will probably double the spices next time. Be aware that the inside takes a while to cook so cook on low. Will make again with some more changes. - 1/4/11

  • These were very good. I used 1/2 cup regular whole wheat flour and the rest all purpose since I am not overly fond of all whole wheat and I used some applesauce I had canned in place of the apple butter, and added 1/2 teaspoon cinnamon. They have a faint pumpkin pie taste! - 11/13/10

  • Used WW flour & Splenda blend . Forgot to beat egg whites separately. Added cinnamon cloves and allspice. Use a scant 1/4 cup and no more. After getting the griddle hot you can turn it down to a 3 on an elect. cooktop. More than that and they burn. Used butter spray and some Splenda. Very filling - 10/17/10

  • The flavor is EXCELLENT.. I used some pumpkin pie spice as well, which has nutmeg, ginger, cinnamon, and all spice in it.

    The only thing is that it requires cooking for a long time, it'll stay smooshy inside while it looks done on the outside.
