Ingredients

    1 box Devil's Food Cake Mix
    1 15oz can Pure Pumpkin

Directions

Heat oven to 400. Stir together DRY cake mix and pumpkin in large bowl. It will be very thick and you will be tempted to add ingredients. DON'T! Spoon into muffin pan lined with paper liners or sprayed with non-stick cooking spray. Bake at 400 for 20 minutes. Enjoy!

    Yeah when I first mixed the 2 ingredients I was like "WTF" this is WAY too thick it needs some milk or something". But I resisted the temptation, got a serious arm workout mixing it and out came some very moist ad delish muffins. You can really taste the pumpkin next time ill add cloves & allspice - 11/3/08

    This is a really incredible recipe that still lets you enjoy chocolate. My father is diabetic and so I make this with the Pillsbury low sugar cake mix...he LOVES it! - 3/3/10

    I tried this and loved it as well. Next time I may try adding a little instant espresso disolved in a few tsp of warm water to add a richer flavor. Was really good tho.. will make again. (also added half a muffin to a strawberry smoothie... was great!) - 5/5/09

    Honestly, they look like terds in cupcake liners. I would rather eat sugar free, fat free chocolate jello. I would recommend if you feel like you have to have a somewhat cake-like experience to settle a craving. - 3/18/09

  • Question. How is this 180 calories? On the box of cake mix is has a mix and prepared. Well to be prepared would be with eggs and oil but we don't put that. The mix which on my box was 160 cals and the pumpkin which was 35 cals a serving and there was 3 1/2 serving which is 122 cals= 25 cals a Muffin - 2/1/13

  • For some reason, I'm always low on carbs so this is PERFECT for me! I agree that it was quite an arm workout to get it mixed, but these were the highest rising muffins I have ever made. Rich, decadent, and filling, they'll make a perfect breakfast for me. - 9/17/10

  • I love these and have made them a few times (with a different recipe). I hate boxed mixes so prefer to go from scratch. But try adding 2 T of sour cream and ginger, yum. - 11/24/09

  • You can also mix a can of pumpkin with yellow cake mix and add some pumpkin pie spice. They taste like pumpkin pie muffins. I buy Pillsbury Pumpkin bread mix and mix it with a can of pumpkin to make a dz muffins. They're 2pts each and high in fiber for those W8Watcher folks - 10/20/09

  • I LOVE these! If you can find a lower sugar/ calorie cake mix though, go for it, since you end up eating more than one serving of the mix when you make this recipe. 180 cals. is a little high for me.

    Also: I've brought these to several potlucks and always with AMAZING results -- folks love them - 7/14/09

  • this was so good! i'm going to try the espresso thing next time! i used the same incredients in a brownie recipe from hungry girl but it's much more of a cake consistency than brownie. it works better as cupcakes!
