Arborio Rice, 6 cup cooked in half water half broth
Chicken Broth, 3 cup
Chicken Breast, no skin, 4 breast, bone and skin removed, cooked and chopped
Spinach, frozen, half package
Yellow Sweet Corn, Canned, 2 cup Low Sodium is best
Cheddar Cheese Fat Free 1.5 cups
Then at the end, in last 15 minutes, add all other ingredients. Stirring together. Let simmer 15 minutes and serve. 2 cups per serving is plenty!
I seasoned with pepper and onion. Broth added enough salt for me.
