Broccoli Slaw Quiche

Introduction

Number of Servings: 8

Ingredients

    1 frozen pie crust
    6 large eggs (or substitute)
    1 cup 2% milk
    2 cups of broccoli slaw (in vegetable section
    at the supermarket)
    1 red pepper, sliced
    4 green onions, sliced
    1/2 cup fresh parsley
    1 T. fresh thyme (or 1 tsp. dried)
    1 tsp. salt
    1 T. black pepper

Directions

Unroll pie crust into pie plate. Pat down and use fork to 'flute' the edges.

Toss broccoli slaw, pepper, onion and herbs. Pour into pie crust.

Whisk eggs, milk salt and pepper together and pour over vegetables.

Bake at 325 for 40 minutes or until slightly browned. Serve either hot or cold.
