Spicy Peanut Chicken

Ingredients

    1 T Peanut Oil
    1 cup chopped onions
    4 cloves Garlic, minced
    2 1/2 lbs. boneless, skinless chicken breast, cut into 1 inch pieces
    1/3 cup Chunky Peanut Butter
    1 1/2 tsp. curry powder
    1 tsp. salt
    1 tsp. crushed red pepper
    1/2 tsp. black pepper
    1 (6 oz can) tomato paste
    3 cups petite diced tomatoes, or fresh chopped plum tomatoes
    28 oz. fat free chicken broth

Directions

Heat oil in a Dutch oven over medium heat. Add onion and garlic to pan; cook 5 minutes or until tender, stirring frequently. Add chicken and cook until done. Stir in peanut butter, curry powder, salt, crushed red pepper, black pepper and tomato paste. Cook for about one minute. Add diced tomatoes and borth, bring to a boil. Reduce heat and simmer 30 minutes or until slightly thickened.

Delicious served over rice. You can also top with a little bit of yogurt if it's too spicy.
