Introduction

Ingredients

    6 slicesof yellow or any other onion cut on hulf
    1 small can or 1 cup sliced fresh mushrooms
    1 glove garlic, minced
    1/2 green bell pepper, cut in stripes
    1stalk celery, cut
    1/2 tomatoes or 5-6 cherry tomatoes
    4 eggs, lightly bitten
    1/2 cup nonfat milk
    2 tbs olive oil (or any other vegetable oil)
    salt, pepper

Directions

In a medium bowl add olive oiland hit on medium high. Add onions and cook, not brown. Add mushrums, minced garlis, salt and papper. Cook for 3-5 min. Then add celery, bell pepper and tomatoes. Mix and cook for 2 more min. Minwhile, lightly bit eggs with dash of salt, add milk (it is 2 tbs for 1 egg). Mox well. Pour egg mix into the bowl, do not stir. Spread with parsley or any greens you like. Yoe can sprinkle with cheese also. After 2 min reduce hit to low and cook covered for 10 min, or until it is fully backed.
