Zucchini Fritters

Number of Servings: 10

Ingredients

    1/4 cup reduced fat buttermilk
    1/4 cup Eggbeaters liquid egg substitute
    1/2 cup panko (Japanese) bread crumbs
    note: used dry unseasoned in nutrition info
    1/2 cup seasoned dry bread crumbs
    1/4 cup grated Parmesan cheese
    1/4 tsp garlic salt
    1/4 tsp oregano
    1/4 tsp cumin or 1-1/2 tsp taco seasoning
    3 medium zucchini, cut to 1/4 inch slices (about 3 1/3 cups)

Directions

In a shallow bowl, combine buttermilk and egg substitute. In another shallow bowl, combine crumbs, cheese, and seasonings.
Dip zucchini into buttermilk mixture, then crumb mixture.
Place on baking sheets coated with cooking spray.
Bake at 400* for 20-25 minutes or until golden brown, turning once. Serve with salsa, marinara, or tzatziki sauce (not included in recipe).

1 serving is about 1/3 cup of zucchini.
