Cuban Chicken Skewers

Introduction

This dish reminds me of some of the best Cuban meals I've ever had! It's a bit spicy, but for those that like it spicy, you'll love it! Skewers of chicken grilled to perfection! Ingredients

    1/2 cup orange juice
    3 tablespoons fresh lemon juice
    1 taspoon olive oil
    2 large garlic cloves, minced
    1 teaspoon ground cumin
    1/2 teaspoon paprika
    1/2 taspoon table salt
    1/2 teaspoon dried oregano
    2 pounds uncooked boneless, skinless chicken breast, cut into 32 chunks
    12 small jalapeno peppers, halved lengthwise, seeded (do NOT touch the seeds!)
    2 sprays of olive oil cooking spray

Directions

Pair this with Grilled Summer Veggies and Tropical Fruit Salsa or Santa Fe Salad!

This recipe serves 8, with 3 Weight Watcher Points per serving.

Combine orange and lemon juices, oil, garlic, cumin, paprika, salt and oregano in a resealable plastic food storage bag. Add chicken and peppers; seal bag and turn to coat. Place bag on a plate on bottom shelt fo refrigerater and merinade for 2-8 hours.

Preheat grill. Thread chicken and pepper halves onto 8 metal or wooden skewers, using 4 pieces of chicken and 3 pepper pieces per skewer; coat with cooking spray. (If using wooden skewers, soak in water 30 minutes before using.)

Grill skewers, turning often, until chicken is no longer pink in the center, about 6-8 minutes. Serve immediately.
