Brown Rice Cups

Quick and yummy main dish! Quick and yummy main dish!
Number of Servings: 4

Ingredients

    1 cup Lundberg brown rice
    1 tsp melted Earth Balance buttery spread
    1/4 cup low-fat cheddar cheese, shredded
    2 tbsp fat free milk
    2 tbsp dry bread crumbs
    dash paprika

Directions

Heat oven to 350. Spray or use non-stick muffin tin. Combine all ingredients except paprika in a small bowl and mix well. Spoon into cups in equal parts and press to flatten tops. Sprinkle with paprika.

Bake 18-20 minutes or until light brown.
