Stuffed pepper flavor in a healthy, hearty stew!
1 lb 93/7 lean ground beef
2 green peppers, about 2 cups chopped
1/2 large onion, chopped
1 jar Ragu Light pasta sauce
1 can Hunt's Fire Roasted diced tomatoes with garlic
1 8.5 oz package Uncle Ben's Ready Rice-Whole Grain Medley, Brown and Wild (use plain brown rice to cut sodium)
3 cloves garlic
1 can beef broth (cut sodium with different brands. Nutrition includes SP's generic broth)
1/4 tsp EACH thyme and oregano
1/4 tsp garlic pepper seasoning
dash of onion or garlic salt
red pepper flakes, if desired
Prepare rice according to package.
Add meat, rice, and all remaining ingredients to a large saucepan or stockpot. Simmer until heated through.
Serve with sourdough or italian bread with a green salad.
Makes 6-8 servings, 10 if you stretch it. Nutrition info for 8.
