Quickish Jambalaya

Introduction

Modification of South Beach Diet Quick & Easy Chicken Jambalaya Modification of South Beach Diet Quick & Easy Chicken Jambalaya
Number of Servings: 4

Ingredients

    1 pkg Turkey Smoked Sausage
    1 Green bell pepper, chopped
    1/2 c frozen diced onions
    2 cloves garlic
    1 T olive oil
    1/2 c Instant brown rice
    1/8 t Cajun Seasoning
    1 (14 oz) can chicken broth
    1 (14 oz) can diced tomatoes with green chiles

Directions

Heat olive oil over med-high heat, add sausage, pepper, onion, and garlic. Saute 5 mins or until pepper is softened. Add rice and cajun seasoning. Stir in chicken broth and tomatoes, bring to a boil. Cover, reduce heat to low, and simmer 30 mins, stirring occasionally.
