Big Pot Of Chili (not too spicy)

Introduction

This recipe is for those who enjoy color and flavor in their chili and not just spice. this is probably a 1 alarm chili so it's great for kids. This recipe is for those who enjoy color and flavor in their chili and not just spice. this is probably a 1 alarm chili so it's great for kids.
Number of Servings: 19

Ingredients

    1 lb ground beef
    1 whole onion (vidalia = sweet)
    1 whole green bell pepper
    1 whole red bell pepper
    4 cans of light red kidney beans (15 oz can)
    8 cans of tomato sauce (8 oz can)
    4 cans of diced tomatoes (14.5 oz can)
    1 packet of chili seasoning

Directions

1. Crumble and cook ground beef, drain
2. Peel and chop onion into bite sized chunks
3. Core and chop bell peppers into bite sized chunks
(remove seeds from core and save the seeds, throw away the core/stem piece.)
4. Open all cans and packet of seasoning
5. Drain Kidney beans if desired.
6. Dump everything (seeds included) into a very large pot or crock pot. Stir occasionally.
It is finished cooking when the vegetables are soft and you can easily cut through them with a spoon. This will take quite a few hours for a pot this large.
Enjoy on the first night with crackers
Enjoy on the second night with crackers.
It's soooo much better on the second day because the flavors have had time to settle and meld. It's really quite something.

This recipe is very versatile. Try it with ground turkey, extra jalapenos, chili hot beans, yellow and orange peppers, different kinds of onions or beans. Experiment and enjoy.
