No-Chicken Noodle Soup

Introduction

I love this taste- reminds me of eating it out of a can when I was younger I love this taste- reminds me of eating it out of a can when I was younger
Number of Servings: 1

Ingredients

    1 oz. uncooked short pasta (I like orzo)
    3 baby carrots- sliced into rounds
    1 small celery stalk, sliced
    2 T sliced onions
    1.5 cup vegetable broth (You can cut it with water if you like to cut down on sodium)
    1t poultry seasoning
    1/4t onion powder
    1/4t celery seed- ground
    1 bay leaf
    1/2t parsley

Directions

Saute veggies in a small, nonstick sauce pan, until they start to brown

Add seasonings and bay leaf, pasta and broth.

bring to a boil, then reduce heat and simmer for about 10 minutes, until veggies are cooked through and pasta is cooked al dente.

This makes one HUGE serving that matches well with a a nice grilled cheese sandwich.
