Ingredients

    3 stalks leeks (including stems)
    3 med fresh tomatoes
    1/2 c. broccoli
    1/2 c. onion
    12 baby carrots
    1 c. red cabbage
    1 c. green pepper
    3 tbsp. salsa (low salt)
    3 oz extra lean beef
    1 1/2 c. red kidney beans
    1 1/2 c lima beans (white flat beans)
    1 1/2 ttbsp flaxseed
    30 gm.salt free beef broullion powder
    2 tsp garlic
    1 tsp black pepper
    2 tsp coriander seed
    1 tsp celery seed
    Water to fell large dutch oven pot


Directions

Brown ground beef and microwave or stir fry in no oil substitue and set aside
cut all veggies and put in large pot along with the seasonings
Cook until veggies are tender but not overcooked
Add Beef
Just about 5 minutes before serving, add the beans.
This recipe serves 14 cups.
