Chicken Thighs and Rice with Honey Lemon

Introduction

One dish meal just add a veggie. One dish meal just add a veggie.
Number of Servings: 4

Ingredients

    2 tbs lemon juice
    1 (14 oz) can chicken broth
    2 tbs honey
    2 tbs soy sauce
    1 tsp olive oil
    1 medium onion - chopped
    1 cup long grain rice - uncooked
    1/2 tsp black pepper
    1 tbs parsley
    8 skinless chicken thighs

Directions

In a large skillet with tight fitting lid heat olive oil and brown chicken thighs.
Remove thighs when browned and add onion.
Saute until onion is soft.
Add lemon juice, chicken broth, honey, soy sauce, black pepper, parsley, and rice. Stir to combine.
Add browned chicken thighs on top.
Cover and simmer for about 30 minutes or until chicken is done and liquid is absorbed.

    This was delicious! Like others, I made it with brown rice, but I cooked the meat and sauce in the slow cooker, then used liquid from that to make the rice instead of water to give it the flavour of the dish. It was easier than cooking it on the stovetop and all I had to do was add a veggie dish. - 8/5/10

    One of my fave dishes! I've made it three times already and I suggest using Basmati rice and a red onion and sautéing it really well. I love that you can really use any protein you'd like. - 9/8/11

    Very tasty. I put one thigh and one drumstick per person andthis was a very big prtion which not everyone eat. I added an extra hlf a cup of rice and it was a very popular dish! - 4/11/10

    Wow, this was surprisingly awesome! I've had chicken and rice recipes before where the rice turned out bland, but this was so good. The chicken was super juicy, too--at least the part I got to eat. My 18 month old loved it so much he ate most of both mine and DH's portions! - 4/8/10

    I made this for my family... usually my kids are very hesitant when it comes to trying something different than the normal chicken on the grill. They absolutely loved this..infact, we had made it twice in one week because they loved it so much. It was very easy to make and very light as a meal. - 9/22/09

  • This recipe was superb, especially the rice. Everyone loved it, even my son who usually only likes white rice. It did take longer to cook the rice. I think next time I'll precook it part of the way. (We live in high altitude so it always takes longer to cook the rice). Great recipe. - 1/14/14

  • DELICIOUS!!!! Didn't make it exactly like recipe, because I tried to use what I already had. So used squeeze of an orange for lime juice, maple syrup for the honey, and chicken breasts instead of thighs. DELICIOUS!! grrreat!!!and no onion,no parsley, did use basil instead. will make again - 3/20/12

  • Great meal for a family dinner. The rice was absolutely delicious and my whole family liked it, even all four kids which rarely happens. I made an extra half cup of rice and with that this easily fed all of us (the kids range in age from 3 - 9) with a spinach salad on the side. Will make again! - 5/2/11

  • Added garlic with onion. Put all ingredients in crock pot with drumstick/thigh quarters skinned. Cooked 4 hours. Removed chicken from sauce. Used sauce plus needed chicken broth. When rice was done added 1 pound frozen peas. Served rice/peas with chicken on top. GREAT success. Thanks for the recipe. - 4/30/11
