Chili Rellenos Casserole

Ingredients

    1# extra lean ground turkey, 2t cumin, 1 1/2 dried oregano, 1/2 t garlic powder, 1/2 t pepper, 1 can 160z FF refried beans, 3 cans whole chilies (4 oz cans)2 cups reduced fat cheese (I used mexican crumbles) 1 can corn 15 oz, 1/2 c. whole wheat flour, 1 1/2 c FF milk, hot suuce to taste 1/4 t, 2 eggs, 3 egg whiles.

Directions

cook turkey, drain add cumin, oregano, garlic, and pepper. Stir in beans. Drain and cut chiles lengthwise in 1/4's. Arrange 1/2 in baking dish (glass), top w/ 1/2 cheese. Spoon mounds of bean,turkey mixture on top of cheese leaving a 1/4 inch border. top with corn. arrange remaining chilies, top with rest of cheese. set aside. Combine flour, milk and hot sauce with wisk. wisk in eggs. pour of casserole. bake 350F for 1 hour or until ser. let stand 5 minutes before serving.

  • SO GOOD even my 9 year old asked for seconds. I pretty much skipped adding the hot sauce since I knew my 9 year old would be eating it but I will make it again when she is not home and this time with the spice!!! - 3/22/10
