Spicy salmon wok with noodles

Ingredients

1-2 carrots diced
1/2-1 cup leek diced leeks
1/2 cup green beans (snap) cut in halves
400 g salmon fillets diced
1 clove of fresh garlic (or more)
a piece of fresh ginger root
1/2 - 1 fresh red chili pepper
A dash of olive oil
(Alternatively you can use red curry paste)
1/2-1 cup reduced fat coconut milk
1-2 cups egg noodles
Directions
Dice carrots, leeks and salmon fillets into cubes of about the same size. (~1/2 inch), cut the beans in half.
Chop the spices very finely (chili, garlic, ginger)
Add the spices to a warm wok with a small amount of olive oil.
Add carrots to the wok. When carrots have had a head start, add the other dices vegetables and salmon.
Add (reduced-fat) coconut milk and let everything simmer for a while until the vegetables are tender and the salmon is done to your liking.
I like my vegetables with a little bite.
Prepare egg noodles by giving them a couple of minutes bath in boiling water until done.
Add noodles to the wok.
Serve and enjoy!

You can substitute your favorite vegetables in this dish and add more vegetables to make a bigger portion without increasing the calories much
